Peppers and Corn.

I’ve never been a veggies girl. I’ll occasionally heat up a can of green beans or have a salad with dinner, but fish and carbs are my go-to. While visiting with Chris’s family a few weeks back, I put a spoonful of this corn-and-pepper-relish on my plate to be polite, then maybe ended up eating an embarrassingly three servings worth… Following this recipeΒ (listed under the pistachio chicken recipe,) I’ve been making the batch in whole at the beginning of the week, then heating it up on a skillet with dinner. Β I also added a jalapeΓ±o to give it a little more kick… I swear I was Thai in another life.
